Ingredients:
4 Tbsp dark chocolate chunks/chips (I love these Hu Kitchen ones!!)
1 Tbsp coconut oil
6 Tbsp smooth peanut butter of choice
Recipe:
Add 2 Tbsp chocolate and 1/2 Tbsp coconut oil to a small bowl (half of the stated ingredients). Microwave on high for ~30 seconds-1 minute, stirring every ~15 seconds, until mixture is completely melted and smooth.
Line a muffin tin with 6 muffin liners.
Place a small amount of melted chocolate (~1 Tbsp-ish) into each muffin liner. Swirl around to coat the sides!
Place the muffin tin with chocolate in the freezer. Freeze chocolate in liners for ~30 minutes, or until completely dried and hardened.
Once out of the freezer, place ~1 tbsp-ish peanut butter into each chocolate cup (melt the peanut butter to make this step extra smooth & easy!!)
Top each cup with more melted chocolate (repeat step 1 to make), smooth out with a spoon, and freeze for at least 1 hour! Store in the freezer and enjoy cold!
Nutrition:
Dark chocolate: cacao is chalk full of nutrients including fiber, copper, magnesium, iron, and manganese! It is also a great source of healthy fats and antioxidants. When consumed in moderation, chocolate can absolutely be a part of a healthy and balanced diet!
Peanut butter: peanuts are an awesome source of plant-based protein, as well as vitamins and fiber! Peanut butter is also full of healthy mono-unsaturated fats, which can lower LDL cholesterol and reduce your risk for heart disease.
Coconut oil: although coconut oil is a saturated fat and should be consumed in moderation, it is also a great source of medium-chain triglycerides (MCTs), which are easily digested for those with GI conditions! It also has anti-microbial effects and lots of antioxidants.
