Air Fried Parmesan Zucchini Crisps

Crispy & cheesy & delicious

These cheesy zucchini bites are the perfect addition to any meal! Using only 3 ingredients, they are a foolproof way to elevate your veggie game. Read below for the recipe and nutrition information!

 

Recipe Information:

  • Makes 2 servings

  • Preparation time: 3 minutes

  • Total time: 20 minutes

Ingredients:

  • 1 zucchini squash, sliced into coins

  • 1 Tbsp extra virgin olive oil

  • 1/2 cup parmesan cheese, shredded or grated

Recipe:

  1. Slice zucchini into thin coins.

  2. On the cutting board or in a small bowl, coat zucchini slices in olive oil. Ensure that all slices are equally coated! (Optional: coat in your favorite seasonings, if desired. The parmesan adds enough flavor for me, though!)

  3. Arrange prepared zucchini slices in a single layer in the air fryer. Air fry zucchini coins at 380 degrees F for 6-8 minutes, or until they begin to brown and crisp.

  4. Pause the air fryer and remove the basket. Evenly distribute parmesan cheese on top of all zucchini slices. Push basket back in and resume cooking.

  5. Continue air frying parmesan zucchini coins at 380 degrees F for an additional 8-10 minutes, or until parmesan cheese has become golden in color and crisped in texture. Enjoy!

  • Zucchini: zucchini is rich in many nutrients and plant compounds! It's high in vitamin A, vitamin C, lutein, manganese, zeaxanthin, and beta-carotene, which support eye health and vision! They're also great for the immune system. Zucchini is high in heart healthy carotenoids, antioxidants, fiber, and potassium, as well. **Fun fact: zucchini is botanically classified as a fruit!

  • Parmesan cheese: parmesan is naturally lactose-free! It also is a good source of calcium, phosphorus, sodium, potassium, magnesium, and vitamin A.
