These poppers are a major crowd pleaser and are so so easy to whip up. They can also be as spicy or as mild as you would like! Read below for the recipe and nutrition information!
Recipe Information:
Makes 10 poppers

Ingredients:
6 Tbsp cream cheese of choice
3 Tbsp shredded cheddar cheese
2 Tbsp diced red onion
1 tsp salt
1 tsp pepper
2 tsp garlic powder
2 tsp paprika
5-10 slices bacon of choice
Recipe:
Preheat oven to 400 degrees F and line a baking sheet with tin foil.
To prepare the jalapeños, slice the stems off and cut in half (lengthwise). Remove the "guts" of the jalapeños with a spoon. Depending on your spice preferences, remove as little or as many seeds as you want. The less seeds remaining, the less spicy your poppers will be. (all seeds removed = virtually no spice!!)
Make your cream cheese filling: In a small bowl, combine cream cheese, cheddar cheese, red onion, and seasonings. Mix until well combined and set aside.
Assembly: using a spoon, spread ~0.5-1 Tbsp of cream cheese filling into the cavity of each jalapeño. Spread evenly and pack tightly into the cavity.
Bacon wrapping time! I cut my bacon in half and don't fully cover each popper, but this is totally up to preferences and the size of jalapeños! Feel free to wrap as you please. If you have toothpicks, it also helps to stick a toothpick through the bacon wrapped popper before baking it to prevent unraveling.
Place the poppers on your prepared sheet pan and bake at 400 degrees F for 18-35 minutes, depending on how many you make and size of poppers. Check periodically and bake until bacon is fully crisped. Remove from oven and enjoy!
