Banana Bread Bars

Recipe Information:

  • Makes 10 servings

  • Preparation time: 15 minutes

  • Total time: 40 minutes

Ingredients:

  • 1/2 cup unsalted butter (at room temperature)

  • 1 1/2 cups brown sugar

  • 3 extra-ripe bananas, mashed

  • 3 large eggs

  • 1 Tbsp plain Greek yogurt

  • 1 tsp vanilla extract

  • 2 cups flour

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • 1/4 tsp salt

  • 1/4-1/2 cup crushed pecans

Recipe:

  1. Preheat oven to 350° and line or oil a 9x13 pan (I love using coconut oil for this!)

  2. In a large bowl with an electric mixer, cream together butter and sugar on high speed until the mixture is light and fluffy, for about 3-5 minutes. It may help to start out slow and gradually increase the mixing speed as the butter breaks up and combines with the sugar!

  3. Once the butter and sugar are creamed together, add in the mashed banana, eggs, Greek yogurt, and vanilla extract. Mix at medium-low speed until well combined.

  4. Switching to a low speed, add the flour, baking soda, cinnamon, and salt to the mixture. Mix until no dry bits remain.

  5. Using a spoon or spatula, fold the crushed pecan pieces into your mixture.

  6. Once the mixture is fully combined, transfer the mixture to the prepared 9x13 pan.

  7. Bake bars for about 25 minutes, or until the edges are golden brown and a toothpick can be stuck into the center and come out clean!

  8. Let the banana bread cool before cutting and serving. Cut into bars and enjoy! I love mine topped with some almond butter and vanilla Oat Haus granola butter!!

  • Greek yogurt: greek yogurt is a great source of protein, vitamin B12, riboflavin, and selenium! It's also great for gut health, bones, and supporting muscle recovery.

  • Cinnamon: although more research is needed, cinnamon has been associated with numerous health benefits! The list includes improving blood pressure and circulation, reducing cholesterol and blood lipids, and having heart-protective effects.
