Brown Butter Cinnamon Roll Cookies

Better than Crumbl!

Recipe Information:

  • Makes ~14 large cookies

  • Preparation time: 20 minutes

  • Total time: 1 hr & 30 minutes


Ingredients:

For the Cookies:

  • 2 sticks (1/2 cup) unsalted butter, cold and chopped into slices (see below for how to brown!)

  • 2 1/2 cups all purpose flour

  • 2 tsp baking powder

  • 3/4 tsp fine sea salt

  • 3/4 cup brown sugar

  • 1/2 cup granulated sugar

  • 1 large egg + 1 egg yolk

  • 1 tsp vanilla extract

For the Cinnamon Topping:

  • 2 Tbsp softened unsalted butter

  • 1/4 cup brown sugar

  • 1 Tbsp ground cinnamon


Recipe:

  1. In a large stainless steel pan over medium heat, brown the butter! Place chopped cold butter into the pan and stir continuously for about 5-8 minutes, or until the butter is golden brown, smells nutty, the foam has subsided a bit, and the bottom of the pan has visible brown bits. Bubbling and cracking sounds are normal during the process! Remove from heat and pour it into a bowl, allowing it to cool to room temperature before use.

  2. In a medium bowl, whisk together flour, baking powder, and sea salt until well combined.

  3. In a large electric mixing bowl, use the paddle attachment to cream together the melted (room temperature) butter and both sugars. Mix on medium speed until fluffy, for about 3 minutes.

  4. Add the egg, egg yolk, and vanilla to the mixer. Continue mixing until well combined.

  5. Gradually add the flour mixture into the electric mixer. Add a small amount at a time to ensure minimal spillage! Continue mixing until no dry spots remain.

  6. Cover the dough and place into the refrigerator for at least 1 hour.

  7. Preheat oven to 350 degrees F and prepare 2 baking sheets with parchment paper.

  8. In a small bowl, place the cinnamon topping ingredients to be combined. Use a fork (or your fingers) to cream them together.

  9. Create round dough balls ~3 inches wide and tall. Place each ball onto the prepared baking sheet ~3 inches apart, evenly spread out. Slightly flatten each ball with your fingers.

  10. Evenly divide the cinnamon topping across each cookie by placing a small spoonful on top, spreading it out across the top of the cookie.

  11. Bake cookies for 10-12 minutes, until the edges begin to appear dry and the middles appear soft. Remove from the oven, allow to set for at least 10 minutes, cool & enjoy!
