Better than Crumbl!
Read below for the recipe!
Recipe Information:
Makes ~14 large cookies
Preparation time: 20 minutes
Total time: 1 hr & 30 minutes
Ingredients:
For the Cookies:
2 sticks (1/2 cup) unsalted butter, cold and chopped into slices (see below for how to brown!)
2 tsp baking powder
3/4 cup brown sugar
1/2 cup granulated sugar
1 large egg + 1 egg yolk
1 tsp vanilla extract
For the Cinnamon Topping:
2 Tbsp softened unsalted butter
1/4 cup brown sugar
1 Tbsp ground cinnamon
Recipe:
In a large stainless steel pan over medium heat, brown the butter! Place chopped cold butter into the pan and stir continuously for about 5-8 minutes, or until the butter is golden brown, smells nutty, the foam has subsided a bit, and the bottom of the pan has visible brown bits. Bubbling and cracking sounds are normal during the process! Remove from heat and pour it into a bowl, allowing it to cool to room temperature before use.
In a medium bowl, whisk together flour, baking powder, and sea salt until well combined.
In a large electric mixing bowl, use the paddle attachment to cream together the melted (room temperature) butter and both sugars. Mix on medium speed until fluffy, for about 3 minutes.
Add the egg, egg yolk, and vanilla to the mixer. Continue mixing until well combined.
Gradually add the flour mixture into the electric mixer. Add a small amount at a time to ensure minimal spillage! Continue mixing until no dry spots remain.
Cover the dough and place into the refrigerator for at least 1 hour.
Preheat oven to 350 degrees F and prepare 2 baking sheets with parchment paper.
In a small bowl, place the cinnamon topping ingredients to be combined. Use a fork (or your fingers) to cream them together.
Create round dough balls ~3 inches wide and tall. Place each ball onto the prepared baking sheet ~3 inches apart, evenly spread out. Slightly flatten each ball with your fingers.
Evenly divide the cinnamon topping across each cookie by placing a small spoonful on top, spreading it out across the top of the cookie.
Bake cookies for 10-12 minutes, until the edges begin to appear dry and the middles appear soft. Remove from the oven, allow to set for at least 10 minutes, cool & enjoy!
