Brown Butter Oatmeal Cinnamon Cookies

The BEST oatmeal cookie recipe!

Recipe Information:

Ingredients:

  • 1 cup unsalted brown butter (start with cold chopped butter cubes, see recipe below for how to brown!)

  • 1 cup brown sugar

  • ½ cup granulated sugar

  • 2 eggs

  • 2 tsp vanilla extract

  • 1 ¾ cup all-purpose flour

  • 2 tsp cornstarch

  • 1 tsp baking soda

  • ¾ tsp fine sea salt

  • 2 tsp ground cinnamon

  • 3 cups rolled oats


Recipe:

  1. To brown the butter: In a large stainless steel pan over medium heat, brown the butter! Place chopped cold butter into the pan and stir continuously for about 5-8 minutes, or until the butter is golden brown, smells nutty, and the bottom of the pan has visible brown bits. Remove from heat and pour it into a bowl, allowing it to cool in the refrigerator until just softened.

  2. Beat butter in the bowl of an electric stand mixer for 30 seconds to 1 minute on medium speed, until light and fluffy.

  3. Add both sugars and continue beating on medium speed until light and fluffy. Add both eggs and vanilla extract, beating until well combined.

  4. In a separate bowl, thoroughly whisk together the dry ingredients (flour, cornstarch, baking soda, salt, and cinnamon).

  5. Gradually add flour mixture to butter mixture, beating on low speed, until completely combined. Scrape the sides and bottom of the bowl as you go to ensure all ingredients completely combine.

  6. Continuing on low speed, gradually add the oats to the mixture until well incorporated.

  7. Place a large sheet of plastic/saran wrap on a flat surface and pour dough into the center of it. Wrap the dough tightly into the plastic wrap. Flatten into a square/rectangle and place in the refrigerator for at least 1 hour, up to 24 hours.

  8. Once the dough is properly chilled, remove from the refrigerator. Preheat oven to 350 degrees F and prepare two baking sheets with parchment paper. Unwrap the dough from the plastic wrap and use a sharp knife to cut into individual dough slices (2 inches x 2 inches). Alternatively, you can also use your hands to shape into dough balls. Arrange dough slices/balls on the baking sheet at least 2 inches away from each other.

  9. Bake cookies for 12-14 mins (should appear dry on top but slightly soft and gooey to the touch, they set a bit once out of the oven!) Allow to cool and enjoy.
