Burrata + Grilled Veggie Sandwich

The messier, the better.

Burrata is probably my all-time favorite food... and nothing beats it on a sandwich. This sando is the perfect balance of healthy, refreshing, and decadent. It's also so fun to squeeze!! Be prepared to get messy and have the best sandwich of your life. Read below for the recipe and nutrition information!

  • Total time: 15 minutes

Ingredients:

  1. Slice the ciabatta roll in half and toast until golden brown.

  2. Add olive oil to a medium pan and turn to high heat. Add bell pepper and red onion slices. Pan sear for about 5 minutes on each side until vegetables have a slight char (see video below for an example).

  3. Time to assemble your sandwich! Spread Bitchin' Pesto on each half of bread. Layer arugula, red bell pepper, red onion, and burrata cheese. Stack other bread half on top and squish!! Enjoy!



 

Nutrition:

  • Red onion: red onions are full of sulfur compounds that protect the body from ulcers and various cancers. They also fight bacteria and contain quercetin, an anti-inflammatory antioxidant that protects against cancer, allergies, and heart disease.

  • Red bell pepper: bell peppers are one of the highest foods in vitamin C! They also have heart-healthy antioxidants, lots of vitamin A, and fiber.

  • Arugula: arugula's bitter taste/smell comes from glucosinolates, which may protect the body against certain cancers. It's also full of antioxidants and helps with the absorption of many minerals.

  • Burrata: burrata is not only a great source of protein and calcium, but it is also full of vitamins and absolutely DELICIOUS.
