Chicken Caprese Sandwich

The yummiest & easiest!

Recipe Information:

  • Makes 1 sandwich

  • Total time: 20 minutes

Ingredients:

Recipe:

  1. Grill chicken breast as usual (check out my grilled chicken recipe for this)!

  2. Once chicken is fully cooked, add to a large mixing bowl. Add 1 Tbsp pesto (save the other Tbsp for later!) and mayonnaise to bowl. Use electric mixer (stand or hand-held) on the chicken to shred it! This is my tried-and-trued easiest way of shredding chicken. Continue until chicken is fully shredded and condiments are mixed in. Set aside.

  3. Cut the toasted ciabatta roll in half and spread remaining 1 Tbsp pesto to both sides. On top of the pesto, layer mozzarella cheese, fresh basil leaves, heirloom tomato slices, ~1/3 cup shredded chicken mixture, and balsamic glaze. Smush sandwich and enjoy!



 

Nutrition:

  • Mozzarella cheese: mozzarella is a great source of protein, is lower in sodium & saturated fat than many other cheese types, and contains probiotics for a happy gut!

  • Fresh basil: basil is full of antioxidants and essential oils, making it great for heart health, inflammation, immunity protection, mental health, blood sugar regulation, and more!

  • Tomato: tomatoes are rich in vitamin C and potassium! They contain an antioxidant called lycopene, which is linked to many benefits including a reduced risk of heart disease and certain cancers.
