Chocolate Covered Strawberry Chia Seed Pudding

Prep ahead for a quick & delicious start to your day!

Chia seed pudding is one of my favorite hacks for a nutritious breakfast on a busy morning! Prep the night before and store in the refrigerator for an easy morning meal. Made of simple and hearty ingredients, it's the perfect healthy meal to kickstart your day. With the subtle chocolatey and fruity notes, this recipe is my favorite flavor for a sweet start to my mornings. Read below for the recipe and nutrition information!

 

Recipe Information:

  • Makes 1-2 servings

  • Preparation time: 5 minutes

  • Total time: 15 minutes to overnight (8+ hours)

Ingredients:

Recipe:

  1. In a Tupperware bowl, add chia seeds to unsweetened almond milk with vanilla extract, cocoa powder, honey or maple syrup, and protein powder. Mix well until fully combined.

  2. Finely chop strawberries and add to pudding mixture. Fold in strawberries until well combined.

  3. Cover bowl with an airtight lid and refrigerate for at least 10 minutes or leave it overnight for best results.

  4. Remove from refrigerator when ready to eat. Let sit for 2-5 minutes to remove the chill. Add up to an additional 1/4 cup of milk if needed, depending on textural preferences.

  5. Top with slivered almonds and additional strawberries. Enjoy cold!
