Like chocolate covered strawberries... but better!

Recipe Information:

Ingredients:
2 cups strawberries (frozen or fresh!)
1/2 cup Greek Yogurt
2 Tbsp dark chocolate chunks (I love these Hu Kitchen ones!)
1 tsp coconut oil
Recipe:
Roughly dice strawberries and combine in a small bowl with Greek yogurt. Stir well to fully incorporate.
Line a medium-sized plate with a layer of parchment paper. Place spoonfuls of the strawberry/yogurt mixture onto the plate into small circular arrangements, forming individual clusters.
Place the plate into the freezer, freezing the berry clusters for 1-2 hours until they have fully solidified.
In a separate small bowl, combine dark chocolate chunks with coconut oil. Place in the microwave for ~30 seconds, stirring every ~15 seconds, until fully melted and smooth.
Remove berry clusters from the freezer. One at a time, dip & fully cover the berry clusters into the melted chocolate. Place back onto the plate and freeze for at least 1-2 hours more, until fully solidified & dried! Enjoy cold!

Greek yogurt: greek yogurt is a great source of protein, vitamin B12, riboflavin, and selenium! It's also great for gut health, bones, and supporting muscle recovery.
Dark chocolate: cacao is chalk full of nutrients including fiber, copper, magnesium, iron, and manganese! It is also a great source of healthy fats and antioxidants. When consumed in moderation, chocolate can absolutely be a part of a healthy and balanced diet!
Coconut oil: although coconut oil is a saturated fat and should be consumed in moderation, it is also a great source of medium-chain triglycerides (MCTs), which are easily digested for those with GI conditions! It also has anti-microbial effects and lots of antioxidants.
