Chocolate Espresso Sugar Cookies

Ingredients:


Recipe:

  1. Preheat oven to 350 degrees F and prepare 2-3 baking sheets with parchment paper.

  2. In a medium bowl, whisk together flour, baking powder, sea salt, cocoa powder, and espresso powder until well combined.

  3. In a large electric mixing bowl, use the paddle attachment to cream together both butters and sugar. Mix on medium speed until fluffy, for about 3 minutes.

  4. Add the egg, egg yolk, and vanilla to the mixer. Continue mixing until well combined.

  5. Gradually add the flour mixture into the electric mixer. Add a small amount at a time to ensure minimal spillage! Continue mixing until no dry spots remain.

  6. Cover the dough and place into the refrigerator for at least 20 minutes.

  7. In a shallow bowl or large plate, place the additional amounts of sugar and espresso powder. Create round dough balls ~2-3 inches wide. Roll each dough ball through the sugar/espresso powder until fully coated. Place each ball onto the prepared baking sheet ~3 inches apart, evenly spread out. Slightly flatten each ball.

  8. Bake cookies for 10-12 minutes, until the edges begin to harden and the middles appear soft. Remove from the oven, allow to set for at least 5 minutes, cool & enjoy!
