Recipe Information:

Ingredients:
2 tsp baking powder
2 tbsp espresso powder (plus an additional 2 tbsp to roll dough balls in)
2 sticks unsalted butter, softened
6 tbsp unsalted butter, melted
1 1/4 cups granulated sugar (plus an additional 1/4 cup to roll dough balls in)
1 large egg + 1 egg yolk
1 tsp vanilla extract
Recipe:
Preheat oven to 350 degrees F and prepare 2-3 baking sheets with parchment paper.
In a medium bowl, whisk together flour, baking powder, sea salt, cocoa powder, and espresso powder until well combined.
In a large electric mixing bowl, use the paddle attachment to cream together both butters and sugar. Mix on medium speed until fluffy, for about 3 minutes.
Add the egg, egg yolk, and vanilla to the mixer. Continue mixing until well combined.
Gradually add the flour mixture into the electric mixer. Add a small amount at a time to ensure minimal spillage! Continue mixing until no dry spots remain.
Cover the dough and place into the refrigerator for at least 20 minutes.
In a shallow bowl or large plate, place the additional amounts of sugar and espresso powder. Create round dough balls ~2-3 inches wide. Roll each dough ball through the sugar/espresso powder until fully coated. Place each ball onto the prepared baking sheet ~3 inches apart, evenly spread out. Slightly flatten each ball.
Bake cookies for 10-12 minutes, until the edges begin to harden and the middles appear soft. Remove from the oven, allow to set for at least 5 minutes, cool & enjoy!
