Think York peppermint patties... but a cookie!

Ingredients:
2 tsp baking powder
2 sticks unsalted butter, softened
4 tbsp unsalted butter, melted
1 1/4 cups granulated sugar
1 large egg + 1 egg yolk
1 tsp vanilla extract
1 cup semi-sweet or dark chocolate chips
~16 peppermint creme candies (mini York peppermint patties also work!)
Recipe:
Preheat oven to 350 degrees F and prepare 2-3 baking sheets with parchment paper.
In a medium bowl, whisk together flour, baking powder, sea salt, and cocoa powder until well combined.
In a large electric mixing bowl, use the paddle attachment to cream together both butters and sugar. Mix on medium speed until fluffy, for about 3 minutes.
Add the egg, egg yolk, and vanilla to the mixer. Continue mixing until well combined.
Gradually add the flour mixture into the electric mixer. Add a small amount at a time to ensure minimal spillage! Continue mixing until no dry spots remain. Mix in chocolate chips until fully incorporated.
Cover the dough and place into the refrigerator for at least 20 minutes.
Create round dough balls ~3 inches wide. Use your thumb to flatten each dough ball, placing a peppermint patty candy into the center. Fold the cookie dough back over the candy to enclose the peppermint in the center. Round out and slightly flatten the dough balls. Place each ball onto the prepared baking sheet ~3 inches apart, evenly spread out.
Bake cookies for 10-12 minutes, until the edges begin to harden and the middles appear soft. Remove from the oven, allow to set for at least 5 minutes, cool & enjoy!
