Another banana bread variation!

Recipe Information:

Ingredients:
1/2 cup (1 stick) unsalted brown butter, cooled but softened (see how to brown in the first step of the recipe!)
1 1/2 cup bread flour
1 tsp baking soda
A pinch of salt
1 tbsp ground cinnamon
1/2 cup brown sugar
1/2 cup white sugar
1 tsp vanilla extract
1 large egg
1 cup mashed banana
1 tbsp cinnamon sugar for topping
Recipe:
In a large stainless steel pan over medium heat, brown the butter! Place chopped cold butter into the pan and stir continuously for about 5-8 minutes, or until the butter is golden brown, smells nutty, and the bottom of the pan has visible brown bits. Remove from heat and pour it into a bowl, allowing it to cool to room temperature before use. Can also store in the refrigerator if making ahead of time!
Add all dry ingredients (flour, baking soda, salt, & cinnamon) to a medium sized bowl. Whisk until dry ingredients are well combined. Set aside.
In an electric mixing bowl on medium speed, cream together the brown butter and both sugars until fluffy (~2 mins). If the butter is more on the melted side, it may not become "fluffy" - this is okay! Cream together until well combined. Add the vanilla extract and egg to the electric mixing bowl, continuing on medium speed until well combined.
Switching to low speed, gradually add the mashed banana until fully incorporated. Remaining on low speed, gradually add the dry ingredients to the mixture. Mix until no dry spots remain! Some lumps in the dough are expected due to the banana.
Cover the bowl with saran wrap and place in the refrigerator. Chill the dough for at least one hour.
Once the dough has been properly chilled, remove from the refrigerator and line two baking sheets with parchment paper. Preheat the oven to 350° F. Create dough balls: flatten smaller balls for thin/chewy cookies, or create larger round balls for more a more banana bread-like consistency!
Sprinkle a small amount of cinnamon sugar on each cookie dough ball and place in the oven for 10-13 minutes, until the edges are crisp and tops are dry. Allow cookies to cool and enjoy!
