Recipe Information:
Makes ~8 servings (one loaf pan)
Preparation time: 10 minutes
Total time: 1 hour & 10 minutes
Ingredients:
1 stick unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
3-4 very ripe bananas (the mushier, the better)
2 eggs
1 1/4 cup flour
1/2 tsp salt
1 tsp baking soda
Recipe:
Preheat oven to 350 degrees F. Prepare a loaf pan with a small amount of oil or line with parchment paper.
In a large mixing bowl, cream together butter and sugars until well combined. Add bananas and eggs, continuing to mix until fully mashed and incorporated.
Slowly stir in the remaining ingredients (flour, salt, and baking soda) until no dry spots remain.
Evenly pour batter into prepared loaf pan and place on the center rack of the oven. Bake for one hour, or until a toothpick inserted in the center comes out clean. Allow to cool and enjoy!
Nutrition:
Bananas: bananas are a great source of potassium, which is essential for maintaining balanced fluid levels in the body, helping muscles to contract/reduce cramping, and supports normal blood sugar! Bananas also contain vitamin C, vitamin B6, and many more.
