Dark Chocolate Sea Salt Caramel Cookies

These are... WOW

Recipe Information:

Ingredients:


*You can also omit the caramel for a dark chocolate brownie cookie!


Recipe:

  1. Melt 2/3 cup butter and allow it to cool for 5-10 minutes, ensuring that it does not solidify!

  2. In a large electric mixing bowl with a whisk attachment, whisk cooled butter and both sugars together until fluffy. Add the egg and vanilla to the bowl. Continue whisking until well combined. Remove the whisk attachment and switch over to a classic spoon/paddle.

  3. Hovering a sifter or mesh strainer over the large mixing bowl, measure dry ingredients into the bowl. Mix with the spoon/paddle until a fully combined, thick dough forms. No dry spots should remain. Fold the chopped chocolate into the dough.

  4. Place the dough into the refrigerator for at least 30 minutes, allowing the dough to chill. While chilling, preheat the oven to 350 degrees F and prepare a large baking sheet with parchment paper.

  5. Remove dough from the fridge and create large dough balls. Using your thumb, create an indent in the middle of each dough ball. Press a caramel into the center of the dough ball, covering all sides of it to fully encapsulate the caramel in the dough. Repeat with each dough ball.

  6. Place filled dough balls on the prepared baking sheet, about 3 inches apart from each other (I found that 9 dough balls fit perfectly on my pan). Sprinkle each dough ball with a generous amount of flaky salt.

  7. Bake the cookies for 8-10 minutes, or until the tops appear shiny and cracked. For a chewy cookie, ensure that the middle appears slightly wet/underbaked, while the edges appear dry.

  8. Remove from the oven and place the baking sheet on a flat surface. Tap the baking sheet against the surface 2-3 times, deflating the cookies.

  9. Allow to cool, add another salt sprinkle if desired, and enjoy! Be sure to slightly warm the cookies before consuming to ensure that the caramel is fully melted.

  • Dark chocolate: cacao is chalk full of nutrients including fiber, copper, magnesium, iron, and manganese! It is also a great source of healthy fats and antioxidants. When consumed in moderation, chocolate can absolutely be a part of a healthy and balanced diet!
