What started as an undergrad school project has turned into my favorite & the EASIEST dessert spread!!! This caramel lookalike has only 4 ingredients, plus is refined sugar-free, gluten-free, and dairy-free. The best! Read below for the recipe and nutrition information!
Recipe Information:
Makes ~3 servings
Total time: 5 minutes
Ingredients:
10 pitted dates
A very small sprinkle of sea salt
1/2 tsp vanilla extract
1/3 cup oat milk (or milk of choice)
Optional: extra sea salt to sprinkle on top... I love Maldon's sea salt flakes!
Recipe:
In a high-power blender, simply blend all ingredients together at maximum speed. Blend for up to 1 minute at a time, stirring in between, until desired consistency is met and all dates are completely ground! Feel free to blend as many times as desired.
Use a spoon to remove caramel from blender. Place in a small bowl, top with sea salt flakes, and enjoy! Can be kept in an air-tight container in the refrigerator for up to 5 days.
*Tip: feel free to add additional dates or liquid to the blender, depending on your consistency preferences. It can be easier to blend larger batches, rather than small!
*Tip: if using older/harder/dried out dates, soak them in a bowl of warm water for up to 30 minutes before preparing the caramel! This will soften them & help with the consistency.

They also have a low glycemic index, meaning that they have a low likelihood of spiking blood sugar levels and have been shown to be beneficial in glycemic control.
