Green Goodness Chicken Burger

Filled with all the GOOD things!

Say goodbye to the days of dry and bland chicken burgers. This patty is bursting with flavor and is a solid replacement for the real deal. Plus, the toppings are to die for! Read below for the recipe and nutrition information!

 

Recipe Information:

  • Makes 2 servings

  • Total time: 20 minutes

Ingredients:

  • 3/4 cup chopped yellow onion

  • 2 Tbsp extra virgin olive oil

  • 8 oz ground chicken (1/2 of a standard 16 oz package)

  • 1 tsp Lawry's Seasoned Salt

  • 1 tsp dried & crushed rosemary

  • 1 tsp dried & crushed oregano

  • 2 brioche burger buns

  • 4 Tbsp Pesto Bitchin' Sauce

  • 1 avocado, halved and smashed

  • 1/2 cup Trader Joe's Unexpected Cheddar Cheese, shredded or shaved

  • 1 cup arugula, washed and patted dry

Recipe:

  1. Skin and chop about 1/4-1/2 of an onion, creating 3/4 cup chopped vegetable. Heat 1 Tbsp olive oil in a medium pan over medium heat. When pan and oil are hot, add onion to pan and stir to completely coat in oil. Grill for about 5 minutes, stirring often, until onion begins to turn a golden brown color. Remove onion from pan and set aside. Do not wash pan, reserve for the chicken!

  2. To make the chicken patties, use your hands to combine Lawry's Seasoned Salt with ground chicken and dried herbs. Divide chicken mixture into two equal amounts. Shape each chicken mixture into a ball and flatten with your hands, creating a standard patty shape. In the same pan from the onions, heat an additional 1 Tbsp olive oil over medium heat. Add patties to pan and grill for 5-7 minutes per side, until patties are completely cooked through and no pink remains. The internal temperature of the patties should reach 165 degrees F. **Try not to touch patties as much as possible while they cook to keep them juicy! Remove from heat.

  3. In a separate pan or oven, lightly crisp the brioche bun. Do not burn or overcook!

  4. To assemble the burgers: on each bun, layer 2 Tbsp Pesto Bitchin' Sauce (1 Tbsp per bun side), 1/2 smashed avocado, 1/2 of the grilled onions, 1 chicken patty, 1/4 cup Unexpected Cheddar Cheese, and 1/2 cup arugula. These chicken burgers are a great source of protein, vitamins, and minerals! By using ground chicken rather than red meat, you are making the heart healthy choice by consuming less cholesterol and saturated fat. Everything in moderation!

  • Yellow onion: onions are a good source of vitamin C, folate, vitamin B6, and potassium. They're also full of antioxidants and sulfur-containing plant compounds (quercetin and thiosulfinates), which may lower blood pressure, protect the heart, inhibit the growth of harmful microorganisms, and prevent the formation of blood clots! Yellow onion contains up to 11 times more antioxidants than white onions.

  • Arugula: arugula's bitter taste/smell comes from glucosinolates, which may protect the body against certain cancers. It's also full of antioxidants and helps with the absorption of many minerals.

  • Avocado: HEART HEALTHY FATS!! Avocado contains lots of monounsaturated and polyunsaturated fats (MUFAs and PUFAs), which reduce cholesterol and triglycerides.
