& high fiber for a nutritious + satiating breakfast!

Recipe Information:
Makes 1 serving
Preparation time: 5 minutes
Total time: 8 hours & 5 minutes
Ingredients:
Heaping 1/4 cup rolled oats
1 tbsp Further Food Vanilla Collagen Powder (or vanilla protein powder of choice!)
1 tsp ground cinnamon
A dash of salt
1 tsp honey
1 tsp vanilla extract
1 tbsp plain/unsweetened Greek yogurt
1/4 cup non-fat milk
Optional as topping: 1-2 tbsp blueberries (fresh or frozen work!)
Recipe:
Add all ingredients (except for blueberries) to a small container or jar. Mix with a spoon until well combined and no visible dry spots remain.
Seal the container tightly and place in the refrigerator overnight, for at least 6-8 hours. These oats can be store for up to 4-5 days in the refrigerator! I like to make 4 servings at a time (all stored in separate containers) to meal prep breakfasts for the week!
When ready to enjoy, simply remove from the refrigerator, give the oats one final stir, and top with blueberries. Yum!
Nutrition:
Rolled oats: WHOLE GRAINSSS!! Eating at least 3 servings of whole grains per day has SO many health benefits, including lowering your risk for Type 2 Diabetes, lowering cholesterol, and lowering triglycerides. Whole grains also give your body energy and help with blood glucose control. They're overall essential for a healthy diet!
Greek yogurt: greek yogurt is a great source of protein, vitamin B12, riboflavin, and selenium! It's also great for gut health, bones, and supporting muscle recovery.
Cinnamon: although more research is needed, cinnamon has been associated with numerous health benefits! The list includes improving blood pressure and circulation, reducing cholesterol and blood lipids, and having heart-protective effects.
Peanut butter: peanuts are an awesome source of plant-based protein, as well as vitamins and fiber! Peanut butter is also full of healthy mono-unsaturated fats, which can lower LDL cholesterol and reduce your risk for heart disease.
Flaxseed: flaxseed is high in fiber, omega-3 fatty acids (anti-inflammatory healthy fats!!), lignans (plant compounds being researched for their anti-cancer effects), and even contain protein! Flaxseed is also being studied for its ability to reduce blood pressure, blood sugar, and cholesterol levels.
Blueberries: blueberries are often marketed as a "superfood", and for good reason! They're a great source of dietary fiber, antioxidants, vitamin K, and vitamin C!
