I had the best time coming up with this recipe! After lots of experimentation, it has an amazing flavor profile and is full of nutrients for immunity and overall health. Your skin will love it, too! Read below for the recipe and nutrition information!
Recipe Information:
Makes 1-2 servings
Total time: 1 hour
Ingredients:
2 sweet potatoes (or 1 large), skinned and chopped
2 carrots, skinned and chopped
1/4 red onion, chopped
3 Tbsp extra virgin olive oil
3 garlic cloves, minced
2 1/2 cup low-sodium vegetable broth
1 Tbsp Greek yogurt, plain and unsweetened
1 Tbsp goat cheese
1 Tbsp ground turmeric
1 tsp onion powder
1 tsp ground ginger
1 tsp paprika
1 tsp salt
1 tsp ground pepper
1 tsp chili powder
Recipe:
Preheat oven to 375 degrees F. After chopping veggies, place sweet potatoes, carrots, and red onion on a foil-lined sheet pan with 1 Tbsp olive oil. Bake for 25 minutes, or until vegetables are becoming mushy and golden brown.
Once cooked, slightly smush vegetables on sheet pan (as much as they will go). Next, add them to a large stockpot with vegetable broth over medium heat. Continue mashing vegetables in broth. Cover with a lid and let boil for 5 minutes.
Remove lid and continue mashing the vegetables. Once mashed, add all remaining ingredients to the stockpot. Stir until well combined.
Remove pot from heat and use an immersion blender to combine all ingredients. A standard blender can be used, as well. Ensure to leave some lumps and bumps!
Bring soup back to heat if needed. Top with goat cheese, serve with a warm ciabatta roll, and enjoy!!

Carrots: carrots are a great source of vitamin K, potassium, fiber, antioxidants, and BETA-CAROTENE. Beta-carotene is an antioxidant that your body converts into vitamin A, and it's super beneficial for eye-health, vision, skin, and preventing chronic illnesses.
Goat cheese: goat cheese is nutrient-rich with vitamins and minerals such as copper and riboflavin. It is full of probiotics, as well, aiding in gut health. It's also much easier digested than other cheese types!
Turmeric: turmeric has COUNTLESS benefits for your body & brain! Turmeric contains Curcumin, which has medicinal properties and is SO anti-inflammatory. Curcumin is best absorbed with a pinch of pepper along with it, which is also in this recipe! It also has huge anti-oxidative properties, is great for brain health, is amazing for the heart, and may be linked to improvements in arthritis and preventative measures for Alzheimer's disease.
