Makes 1 serving
Total time: 30 minutes
Ingredients:
1/3 cup ground chicken
2 slices sourdough bread
1 Tbsp diced jalapeño (fresh)
1 Tbsp diced red onion
2 slices Swiss cheese
1 Tbsp shredded cheddar cheese
Recipe:
Cook ground chicken as normal. Just before fully cooked, lower heat to low and add barbecue sauce to pan. Stir to fully coat chicken and finish cooking to completion. Remove from heat and set aside.
To assemble sandwich, place barbecue chicken in between two slices of sourdough bread. Sprinkle jalapeño and red onion on top of chicken. Layer Swiss cheese on top and sprinkle in cheddar cheese, as well. Close sandwich.
In a medium pan over medium heat, grill sandwich until both sides are golden and the filling is melted. Remove from heat and enjoy!
