Recipe Information:
Makes 1-2 servings
Total time: 10 minutes
Ingredients for the Salad:
2 cups shredded or chopped kale, washed and patted dry
1 Tbsp extra virgin olive oil
A pinch of sea salt
~1/2 cup cooked quinoa, slightly warm (use 1 cup for a more satiating meal!)
2-3 strips bacon or turkey bacon, crumbled
~1 cup shredded chicken
~1/2 apple, thinly sliced and chopped into bite-size pieces
~2 Tbsp (or a hefty sprinkle) of blue cheese (goat cheese would also be great!)
~2 Tbsp (or a hefty sprinkle) of pecans
~2 Tbsp (or a hefty sprinkle) of dried cranberries
Ingredients for the Apple Cider Vinaigrette (makes 2 servings):
1 tsp Dijon mustard
2 tbsp apple cider vinegar
2 tbsp extra virgin olive oil
1 tsp honey (if honey is on the thicker side, heat it up for a few seconds until thin!)
Salt and pepper (a pinch of each!)
Recipe:
For the salad base, use your hands to massage kale with olive oil and sea salt until softened and fully covered. Place on the bottom of a medium-sized bowl.
On top of the kale, evenly sprinkle and distribute all remaining ingredients.
For the dressing, place all ingredients in a small mason jar or bowl. If using a jar/bowl with a lid, cover tightly and shake until fully combined. If not, use a fork or small whisk to stir all ingredients together. Be sure that the honey fully dissolves and combines.
Top the salad bowl with ~1/2 of the dressing, toss to evenly coat, and enjoy!
