Loaded Burger Bowl with Healthier Ranch Dressing

No bun, no problem.

Recipe Information:

  • Makes 1 serving

  • Preparation time: 10 minutes

  • Total time: 30 minutes

Ingredients:

For the potatoes:

  • 1/2 russet potato (or 1 small russet potato), sliced into coins

  • 1-2 tsp extra virgin olive oil

  • Seasonings to taste: about 1 tsp of salt, pepper, garlic powder, and paprika!

For the healthier ranch dressing:

For the bowl:

  • Cooked patty of choice (Anything works! This can be plant-based, pre-cooked, chicken, turkey, or regular ole beef. You choose!)

  • 1 serving of mozzarella cheese (can be sliced or shredded!)

  • 1 cup of arugula

  • 1/4 cup of diced red onion

  • 1/2 avocado, sliced

  • 1/2 tomato, sliced

Recipe:

For the potatoes:

  1. In a small bowl, place your potato slices. Drizzle olive oil and seasonings on top. Use your hands to thoroughly mix until all potato coins are evenly coated in oil and spices.

  2. In an air fryer at 400 degrees F, arrange the potatoes in a single layer. Cook for about 10 minutes, before flipping each potato coin over. Continue cooking for ~8 minutes longer, until all potato coins are golden and crispy.

For the healthier ranch dressing:

  1. If using a blender: in a small blender cup, add all ingredients. Blend on high for 1-2 minutes until well combined.

  2. If mixing by hand: in a small bowl, add all ingredients. Use a fork to mix well for 1-2 minutes until thoroughly combined.

For the bowl:

  1. In a medium sized bowl, lay arugula down as the dish's base.

  2. Warm your cooked patty and add the mozzarella cheese on top, allowing it to melt over the patty. Place the cheesy patty on top of the arugula bed. *Optional: add a sprinkle of red pepper flakes to the top of the patty!

  3. Arrange the red onion, avocado, tomato, and air-fried potato slices on top of the arugula base.

  4. Top the bowl with a drizzle of the healthier ranch dressing. Enjoy!



 

Nutrition:

  • Arugula: arugula's bitter taste/smell comes from glucosinolates, which may protect the body against certain cancers. It's also full of antioxidants and helps with the absorption of many minerals.

  • Greek yogurt: greek yogurt is a great source of protein, vitamin B12, riboflavin, and selenium! It's also great for gut health, bones, and supporting muscle recovery.

  • Tomatoes: tomatoes are rich in vitamin C and potassium! They contain an antioxidant called lycopene, which is linked to many benefits including a reduced risk of heart disease and certain cancers.

  • Red onion: red onions are full of sulfur compounds that protect the body from ulcers and various cancers. They also fight bacteria and contain quercetin, an anti-inflammatory antioxidant that protects against cancer, allergies, and heart disease.

  • Avocado: HEART HEALTHY FATS!! Avocado contains lots of monounsaturated and polyunsaturated fats (MUFAs and PUFAs), which reduce cholesterol and triglycerides.

  • Mozzarella cheese: mozzarella is a great source of protein, is lower in sodium & saturated fat than many other cheese types, and contains probiotics for a happy gut!
