Mediterranean Salad Bowl with Lime Tzatziki Sauce

Filled with Greek goodness!!


This salad is so refreshing and delicious on a warm day! With minimal ingredients, it is so easy to make and enjoyable to eat. Read below for the recipe and nutrition information!

 

Recipe Information:

  • Makes 1 serving

  • Total time: 20 minutes

Ingredients:

For the salad bowl:

  • Arugula

  • Grilled chicken breast, chopped into bite size pieces

  • Desired seasonings for chicken: salt, pepper, garlic powder, and paprika

  • Chopped red onion

  • Sliced cucumber

  • Diced tomato

  • Feta cheese

For the lime tzatziki dressing:

  • 1 Tbsp Greek yogurt, plain and unsweetened

  • 2 tsp extra virgin olive oil

  • 2 tsp lime juice

  • 1 garlic clove, crushed

  • 2 tsp dill weed

Recipe:

  1. Cook and dice chicken breast as desired. Mine is seasoned with salt, pepper, garlic powder, and paprika!

  2. In a medium bowl, layer arugula, grilled chicken, red onion, cucumber, tomato, and feta cheese.

  3. For the dressing: blend or mix to combine all ingredients! If dressing is too thick, feel free to add a small amount of water or more lime juice to thin it out.

  4. Enjoy!

This salad bowl is full of nutrients!

  • Arugula: arugula's bitter taste/smell comes from glucosinolates, which may protect the body against certain cancers. It's also full of antioxidants and helps with the absorption of many minerals.

  • Red onion: red onions are full of sulfur compounds that protect the body from ulcers and various cancers. They also fight bacteria and contain quercetin, an anti-inflammatory antioxidant that protects against cancer, allergies, and heart disease.

  • Cucumber: cucumbers are packed with vitamin K, which is essential for blood clotting and bone health! They're also a great source of fiber, vitamin C, vitamin B, copper, phosphorus, potassium, magnesium, and water for hydration!

  • Tomato: tomatoes are rich in vitamin C and potassium! They contain an antioxidant called lycopene, which is linked to many benefits including a reduced risk of heart disease and certain cancers.
