Mixed Berry Muffins

On repeat for breakfast & dessert

Ingredients:


Recipe:

  1. Preheat oven to 350 degrees F and prepare a muffin tin with cupcake liners.

  2. In a large mixing bowl, whisk together the flour, sugar, salt, and baking powder until well combined. Set aside.

  3. In a separate medium bowl, whisk together the oil, egg, milk, and vanilla extract until well combined.

  4. Using a spatula or large spoon, pour the wet ingredients into the large mixing bowl, combining with the dry mixture. Stir well until no dry spots remain and the two mixtures are fully combined.

  5. Pour berries into the batter. Use your spatula/spoon to gently fold them in until well incorporated. Careful not to over-mix & mush them!

  6. Pour ~1/4-1/3 cup of batter into each liner. Sprinkle a small amount of sugar onto the top of each muffin.

  7. Bake at 350 degrees F for about 10-14 minutes, or until the top is golden brown and a toothpick inserted into the middle of the muffins comes out clean.

  8. Allow to cool & enjoy!



*NOTE: These can also be air-fried! Depending on your air fryer, place the entire muffin tin into the basket at 350 degrees F and bake for about 12 minutes. If your basket is smaller, place each individual muffin liner into a circular ramekin and bake the same way!
