Salami & Mozzarella Sando

Because everything is better with balsamic glaze!

Ingredients:

Recipe:

  1. Preheat oven to broil on high. Prepare a baking sheet with aluminum foil.

  2. Lay out sourdough bread slices. Spread mayo on one slice and balsamic glaze on the other. Layer arugula, salami, and mozzarella cheese on top. Close sandwich.

  3. Place sandwich on lined baking sheet and broil on high for 3 minutes. Remove sandwich from oven, flip onto other side, and broil for another 2-3 minutes. Remove from oven once golden brown with melted cheese. Enjoy while warm!

 

Nutrition:

  • Sourdough bread: the fermentation process of sourdough makes it more digestible than many other bread types (great for the gut)!! It also delivers iron and folate from its fortified flour and packs in vitamin B12, which is usually only found in animal foods!

  • Arugula: arugula's bitter taste/smell comes from glucosinolates, which may protect the body against certain cancers. It's also full of antioxidants and helps with the absorption of many minerals.

  • Mozzarella cheese: mozzarella is a great source of protein, is lower in sodium & saturated fat than many other cheese types, and contains probiotics for a happy gut!
