This deconstructed sushi bowl is so delicious and easy to make at home. Read below for the recipe and nutrition information!
Recipe Information:
Makes 1 serving
Total time: 20 minutes
Ingredients:
1 serving of tuna sashimi (I purchased mine from H-Mart!)
4 tsp low-sodium soy sauce
1 Tbsp sriracha mayo
1 cup finely chopped cucumber
1 tsp sesame oil
2 tsp rice vinegar
1 cup sushi rice (medium-grain white rice mixed with rice vinegar, sugar, and salt)
1 avocado, sliced
A sprinkle of furikake
Recipe:
For the tuna: dice tuna sashimi and place into a small bowl. Combine sashimi with 2 tsp soy sauce (save other 2 tsp for the cucumber salad) and sriracha mayo. Mix well until fully combined. Set aside.
For the cucumber salad: finely chop cucumber and set into a small bowl. Drizzle sesame oil, rice vinegar, and remaining 2 tsp soy sauce on top. Mix until well combined and all cucumber pieces are fully coated. Set aside.
For the bowl: in a medium bowl, place 1 cup of sushi rice as the base. Pour cucumber salad and ahi tuna mixture on top. Top with avocado and furikake. Enjoy!
