Recipe Information:

  • Makes 1 serving

  • Total time: 20 minutes

Ingredients:

  • 1 serving of tuna sashimi (I purchased mine from H-Mart!)

  • 4 tsp low-sodium soy sauce

  • 1 Tbsp sriracha mayo

  • 1 cup finely chopped cucumber

  • 1 tsp sesame oil

  • 2 tsp rice vinegar

  • 1 cup sushi rice (medium-grain white rice mixed with rice vinegar, sugar, and salt)

  • 1 avocado, sliced

  • A sprinkle of furikake

Recipe:

  1. For the tuna: dice tuna sashimi and place into a small bowl. Combine sashimi with 2 tsp soy sauce (save other 2 tsp for the cucumber salad) and sriracha mayo. Mix well until fully combined. Set aside.

  2. For the cucumber salad: finely chop cucumber and set into a small bowl. Drizzle sesame oil, rice vinegar, and remaining 2 tsp soy sauce on top. Mix until well combined and all cucumber pieces are fully coated. Set aside.

  3. For the bowl: in a medium bowl, place 1 cup of sushi rice as the base. Pour cucumber salad and ahi tuna mixture on top. Top with avocado and furikake. Enjoy!
