Taco Stuffed Sweet Potatoes

Healthy, easy, delicious!

Recipe Information:

  • Makes 2-3 servings

  • Preparation time: 30 mins

  • Total time: 1 hour 20 mins


Ingredients:

  • 1 Tbsp of extra virgin olive oil

  • 2 tsp minced garlic

  • 1/4 cup yellow onion, diced

  • 1/2 zucchini, chopped

  • 1/2 lb ground beef

  • 1 can black beans (15 oz), rinsed and drained

  • Taco seasoning (amount and type to your taste preferences! I use 1/2 packet of a premade seasoning mix)

  • Toppings of choice: avocado, shredded cheese, sour cream, etc.


Recipe:

For the sweet potatoes:

  1. Wash potatoes, poke holes in potatoes, cover potatoes in olive oil + salt (evenly rub onto each), place on foil covered pan, bake at 450 for 40-50 mins


For the taco filling:

  1. Place olive oil and minced garlic into a large pan over medium heat. Saute until fragrant.

  2. Add yellow onion, zucchini, and black beans into the pan (could also do ground turkey or chicken, but I’d add a splash of water for moisture!)

  3. Saute and break up ground beef for a few minutes, until it begins to brown. Once beef is broken up, cover and let simmer for ~10 minutes.

  4. Remove lid, season with taco seasoning and thoroughly mix,. Remove from heat.


To assemble:

  1. Slice potatoes down the middle, lengthwise, about halfway through to expose the sweet potato center. Fill with beef filling, serve with avocado, shredded cheese, and sour cream, and enjoy!


 

Nutrition:

  • Sweet potato: sweet potatoes are great for the immune system! They're packed with vitamin A, vitamin C, manganese, and fiber. They also have anticancer properties and are rich in antioxidants!

  • Zucchini: zucchini is rich in many nutrients and plant compounds! It's high in vitamin A, vitamin C, lutein, manganese, zeaxanthin, and beta-carotene, which support eye health and vision! They're also great for the immune system. Zucchini is high in heart healthy carotenoids, antioxidants, fiber, and potassium, as well. **Fun fact: zucchini is botanically classified as a fruit!

  • Yellow onion: onions are a good source of vitamin C, folate, vitamin B6, and potassium. They're also full of antioxidants and sulfur-containing plant compounds (quercetin and thiosulfinates), which may lower blood pressure, protect the heart, inhibit the growth of harmful microorganisms, and prevent the formation of blood clots! Yellow onion contains up to 11 times more antioxidants than white onions.
