Ingredients:
2 tsp baking powder
2 sticks unsalted butter, softened
1 1/4 cups granulated sugar (plus an additional 1/4 cup to roll dough balls in)
1 large egg + 1 egg yolk
1 tsp vanilla extract
1/4 cup sprinkles of choice (optional) (plus an additional 1/4 cup to roll dough balls in)
Recipe:
Preheat oven to 350 degrees F and prepare 2-3 baking sheets with parchment paper.
In a medium bowl, whisk together flour, baking powder, and sea salt until well combined.
In a large electric mixing bowl, use the paddle attachment to cream together the butter and sugar. Mix on medium speed until fluffy, for about 3 minutes.
Add the egg, egg yolk, and vanilla to the mixer. Continue mixing until well combined.
Gradually add the flour mixture into the electric mixer. Add a small amount at a time to ensure minimal spillage! Continue mixing until no dry spots remain. Pour in sprinkles and mix until fully incorporated.
Cover the dough and place into the refrigerator for at least 20 minutes.
In a shallow bowl or large plate, place equal amounts of sugar and sprinkles. Create round dough balls ~2-3 inches wide. Roll each dough ball through the sugar/sprinkles until fully coated. Place each ball onto the prepared baking sheet ~3 inches apart, evenly spread out. Slightly flatten each ball.
Bake cookies for 10-12 minutes, until the edges begin to brown and the middles appear soft. Remove from the oven, allow to set for at least 5 minutes, cool & enjoy!
