Ingredients:
~9 slices of salami
3 slices of fresh, low-moisture mozzarella cheese
A handful or arugula
A drizzle or spray of extra virgin olive oil
Recipe:
Place both slices of sourdough bread on a plate or prep space. Spread pesto onto bread, evenly distributed between the two slices. On one slice, layer salami, mozzarella cheese, a drizzle of balsamic glaze, and arugula. Place the other slice on top to smush the sandwich together.
In a medium pan on the stovetop, turn heat to medium-high and place a small amount of olive oil (spray or liquid works!). Place the sandwich onto the pan, pressing down with a spatula. Allow to sit for 2-3 minutes, until golden brown, before carefully flipping. Repeat with the second side until the entire sandwich is crispy and golden brown. Remove from heat and enjoy!
