Recipe Information:

Ingredients:
1 cup arugula or spinach
1 cup spinach tortellini, cooked and cooled (love this one from Trader Joe's!)
1/3 cup raw zucchini, chopped and sliced
1/4 cup cherry tomatoes, chopped
1/3 cup chopped salami
1/3 cup shredded parmesan cheese
2 Tbsp pesto
A squeeze of a lemon
A drizzle of olive oil
Recipe:
In a medium sized bowl, add arugula/spinach, cooked and cooled tortellini, zucchini, cherry tomatoes, and chopped salami.
In the center of the bowl, place dollop of pesto.
Top with a squeeze of a lemon and a drizzle of olive oil. Toss and enjoy!
Nutrition:

Pesto: basil is full of antioxidants and essential oils, making it great for heart health, inflammation, immunity protection, mental health, blood sugar regulation, and more!
