Tunacado Melt

With a hint of jalapeño popper? A twist on a classic!

We've all heard of the Joe and the Juice Tunacado. We've all heard of a classic tuna melt. What happens when you combine the two and add a little jalapeño popper filling in there?? Read below for the recipe and nutrition information!

  • Makes 1 serving

  • Total time: 20 minutes

Ingredients:

  1. Make your cream cheese spread: In a small bowl, combine cream cheese, cheddar cheese, red onion, and seasonings. Mix until well combined. Set aside. (Note: this is the same filling that I use in my jalapeño poppers! Check out that recipe next to use up the ingredients!!)

  2. Make your tuna mixture: Drain water from tuna can. In a separate small bowl, combine tuna and entire avocado. Mash together until well combined. Set aside.

  3. Assemble the sandwich! Spread the cream cheese mixture evenly across both sourdough slices. On one side, layer a hefty serving of Unexpected Cheddar Cheese. Place the tuna mixture on top of the cheese and close up the sandwich. (Tip: there may be too much tuna filling for one sandwich! Store the remainder in an air-tight container in the refrigerator).

  4. In a medium pan over medium heat, grill both sides of the sandwich until golden brown and the cheese is gooey. Enjoy while warm!

 

Nutrition:

  • Sourdough bread: the fermentation process of sourdough makes it more digestible than many other bread types (great for the gut)!! It also delivers iron and folate from its fortified flour and packs in vitamin B12, which is usually only found in animal foods!

  • Albacore tuna: albacore tuna is a great source of omega-3 fatty acids, which are essential and anti-inflammatory healthy fats! It's also full of nutrients such as complete protein, vitamin D, vitamin B12, selenium, and iron.

  • Avocado: avocado is full of nutrients and has been associated with a lower risk of many chronic diseases! It's stocked with healthy fats (MUFAs!!), potassium, fiber, and carotenoids (antioxidants great for the immune system and the eyes!)
